Chocolaty Avocado Fudgesicles (Vegan, Paleo)

Equipment

  • Popsicle Mold

Ingredients
  

  • 2 large ripe avocados peeled
  • 2/3 cup raw cacao powder
  • 3/4 cup pure maple syrup or raw honey
  • 1/2 cup full-fat canned coconut milk
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Add all the ingredients into a food processor and blend until creamy  and smooth.
  • Sparkle Tip! Grab a spoon and have a little taste! Creamy! Rich! Delicious! This is a perfect pudding. You could use it in a chocolate trifle or top it with whipped cream and a cherry.
  • Spoon the fudgesicle mixture into your popsicle molds leaving room for the lid and the sticks.
  • Gently tap the mold on the counter to ensure the molds are completely filled and to avoid air pockets.
  • Cover the popsicle mold with the lid and insert popsicle sticks.
  • Freeze for at least 4 hours.
  • Thaw the popsicles for 5 minutes. If you can't wait, run the outside of the mold under hot water to help release the fudgesicles.
  • Enjoy!

Notes

Make sure you have ripe avocados that are soft to the touch!
Blend avocados with cacao powder, melted vegan chocolate, plant milk, maple syrup and vanilla until smooth.
